Thanks to the good folks that helm the Showtime site Weeds fans have a pretty good notion of what Nancy Botwin is up to and what her clan has been doing for the past three years--as she served time in prison(!) As season 7 gets underway, Nancy is on early release and if you don't want to be spoiled stop readng NOW.
Justin Kirk's character, 'Uncle" Andy Botwin, is the only adult cast member who doesn't have a spoiler-ish blurb about either what he's been doing for 3 years or what he plans to do once he reunites with Nancy in New York. Perhaps he's been busy running the University of Andy?
EDIT 5.23.11/ Oops! I should try reading my own posts! Previously, I noted along with where to see more revealing Mary-Louise shots, that the "Stevie' character was being recast! Yay! Now the question: where has little Stevie been for the past three years?/End Edit
Sadly, little Stevie Ray, Nancy's youngest son, who would be 3 or 4 years old now, is not even mentioned. I'm afraid he may be explained him away. He was so cute.
Weeds Season 7, Episode 1: 'Bags:
Synopsis: In the Season 7 premiere, after three years in prison, Nancy receives an early parole to a New York halfway house and discovers her promised witness protection services are no longer necessary; Silas, Shane, Andy and Doug have settled into their new lives in Copenhagen.

Nancy Botwin: Her life so far
The once naîve suburban soccer mom has certainly come a long way in six seasons. Widowed and left destitute with a family to raise, Nancy turned to drug dealing, then Mexican organized crime, then a wild ride through everyday America, all the while trying to keep her kids from becoming complete derelicts and her lovesick brother-in-law at bay. But fate finally caught up with her and she landed in the slammer. Now Nancy's trying to hit reset and make a fresh start for herself in the Big Apple, with only her wits and her wit to see her through.

Character Sketch -
Nancy Botwin is a danger junkie extraordinaire. As one perilous adventure piled on another, and the bodies and money piled up along the way, Nancy continued to tease fate and keep her family together. But at the end of Season 6, Nancy was forced to turn herself in to the FBI as her family scattered. Now three years later, she's out of the slammer and on the streets of New York trying to piece her life back together, with the help of her tart tongue and inspired resourcefulness.
Shane Botwin:
Shane used to be the level-headed son, but after finding a shocking new use for a croquet mallet at the end of Season 5, Shane became the catalyst for his family's latest adventure. But three years in Copenhagen has tamed him, and Shane returns to the states to be with his mother and enroll in college.
Silas Botwin:
No one thought Nancy's eldest son Silas would grow up to be the green thumb in the family. He surprised everyone when he joined his mom's business – against her wishes, of course – and proved to be her most valuable asset. Three years in Denmark has not halted Silas's entrepreneurial zeal, and he steps right back up to the plate to help his mom get back on her feet.
Doug Wilson:
Nancy's friend and business partner Doug Wilson has an uncanny ability to make bad situations worse, but always with the best of intentions. He has been along for the ride with the Botwins for six seasons, and now joins them again in New York. He uses his financial skills to land a job at a free-wheeling hedge fund, with bizarre and unexpected results.
Andy Botwin:
Nancy's irresponsible brother-in-law Andy has been thrown out of rabbinical school, kicked out of the army and even started a business smuggling illegal aliens across the border – all in the name of hooking up. But he can't seem to let go of the Botwins, and Nancy in particular.
